Austin residents are finding a new way to eat local as a familiar restaurant opened its doors in town about two weeks ago.
Boujee Bagels & Coffee Company, first established in Blooming Prairie in the spring of 2024, is now open in Austin as it is located at 1906 Eighth Street NW, in what was formerly Sip N Chew. Owner Trisha Tietje said the move has been a welcomed one so far as the location is a prime spot to draw customers.
“We’re just here to rock it out and to do a great job with phenomenal products that are tried and true to us. We have so much to offer,” Tietje said. “We’re just fresh into it and we’re getting everything rolling. We kind of had to start new, but we did have a few people that were experienced, especially family, behind it. We opened on the coldest week ever, but we had a good turnout and we have a pretty good following on Facebook.”
The Boujee menu has remained mostly the same, but there have been small adjustments. Customers have the option of power bowls, smoothies, hot teas, breakfast and lunch sandwiches, salads, pastries, and of course coffee.
Boujee provides a cozy seating area, and it has also thrived with online orders.
“We have been busy. I think everyone’s excited to try something new in town,” Tietje said. “We’re already doing online orders and we’re starting to dabble with Door Dash. If you Google us, you can find an ordering link. People are walking in (the store) surprised. Although we have limitations, people are coming and enjoying it. We also have a lot of to-go orders, because people are busy and working during the day.”
