Modern Apizza selling canned New Haven tap water

NEW HAVEN, Conn. (WTNH) — It may be the secret ingredient that makes New Haven pizza so good, and it is now available to the public. In a can.
It’s New Haven tap water, which is now being sold along with the dough recipe from the famous Modern Apizza.
“All the ingredients you can buy anywhere in the country, correct? The only thing you can’t buy is the water,” said Billy Pustari, who owns Modern Apizza. “Why is the pizza so much better in New Haven? That has to be something.”
He should know, and he has teamed up with the New Haven Pizza Club to sell cans of that H2O. Or, as they call it, H2Dough.
“Right now, the pizza culture is pretty red hot and New Haven is universally considered to be the best pizza around the world,” said Michael Pollack, the founder of the New Haven Pizza Club.
Armada Brewing is using its facility to can that precious water. Right on that can is written the recipe for Modern’s dough. There is also a QR code. You can point your phone at that and it will take you to an instructional video of Pustari showing you how to make that dough.
A four-pack of H2Dough sells for $29.99, and 10% of the profits go to the Feeding Families Foundation. The group helps feed families of hospitalized children.
Food, of course, is provided to the child as the patient, but not the caregivers and the parents staying with the child,” Feeding Families Foundation co-founder Jeff Dorman said. “So, we created a system and we partnered with Yale to have food delivered to the rooms for the parents.”
New Haven pizza is definitely having a moment. This spring, Rep. Rosa DeLauro (D-3rd District) entered a statement into the congressional record declaring New Haven as the pizza capital of the U.S. She sent a video to the H2Dough announcement.
“I am so glad to see the New Haven Pizza club taking our home town dish to the national stage,” DeLauro said.
It’s moved onto the national stage and into people’s kitchens all over the country.
“You know, making pizza with your family, with the kids,” Pustari said. “The kids get their hands dirty making the dough. It’s just more enjoyable.”
